About the .pepper..field project

We started the .pepper..field project in 2018 and since then Cambodia has been our second home. With 100% fair trade pepper sourcing, we are ensuring economic growth and self-sufficiency in the region as well as technological development.

Due to the project's large development impact on Cambodia, we are trusted and supported by the Czech Development Agency. We are currently helping more than 200 farming families live a good life. Our company is a proud member of the Corporate Social Responsibility (CSR) Association and fulfill the Sustainable Development Goals set by the United Nations. For our hard work, we were awarded 2nd place in the Business category of the SDG Awards in 2021.

The fact that we import very high quality raw material is confirmed by the Great Taste award, which two of our peppers achieved, one of which took the highest 3-star position.

We have managed to combine the taste of pepper, doing good works in Cambodia and bringing you the authenticity of our project, all in the form of luxury gifts that help others.

Kampot pepper is grown in the province of Kampot, located along the very southern coast of Cambodia in Southeast Asia. This is an area which, thanks to its maritime climate and geological conditions, allows its farmers to produce the highest quality pepper in the world. It is not for nothing that this pepper has been awarded a protected geographical indication, similarly as French Champagne.

We buy the pepper from small family-run farms under direct trade conditions that guarantee fair pay for each grower, and we try to promote this approach to other traders. As a result, by buying from us you not only get the highest quality pepper, but also the reassurance that you are buying a sustainable and ethically-sourced product that will help ensure its producers can provide medical care and education for their children.

Processing

Fermented Kampot pepper contains fresh green peppercorns processed directly in Cambodia using the ancient Japanese method of fermentation. A pinch of salt flower, obtained by evaporating seawater, is added to the pickled grains to guarantee the absolute freshness of the grains. Thanks to this process, they retain the flavour of the delicate green peppercorn just-plucked from the pepper plant. The results have been praised by the president of the association that oversees the quality of balanced pepper in Cambodia.

Thanks to a careful selection process that meets the strict quality standards for certified Kampot pepper as set by the Kampot Pepper Promotion Association (KPPA), only the best peppercorns are handpicked. These are then vacuum-sealed to preserve quality and freshness during their journey to Europe, where they are further selected, packaged and delivered to your table.

Characteristics

The green fermented pepper brings the flavour of fresh green peppercorns with a subtle grace. It could almost be called Cambodian caviar, with subtly fresh notes and salty flavours that make it particularly suitable for seasoning.

Usage

Fermented green pepper will be especially loved by vegetarian cuisine enthusiasts for its mildness. While possible to pair with meat, it truly shines when added to salads, spreads or mixed into avocado. It can be used as a finish to creamy soups, to gently enhance the flavour of risotto and prawns, and to create delectable sandwiches or toasties.

This pepper should not be crushed in a grinder due to clogging of the grinding mechanism.

Packaging

We pack the pepper in resealable bags of 40 to 200 grams. Thanks to the materials used and the special technology used to seal the bags, no air or moisture can reach the pepper. Thanks to this, the peppercorns retain the authentic taste and aroma of Kampot pepper even after opening the bag. In addition, once emptied, the bags can be recycled or reused in a variety of other ways. Each pack also includes a booklet that brings you the story of the world's best pepper and introduces you to the world of .pepper..field.
